Food Budget Challenge: Week 3

Hi everyone,

Really enjoyed this week trying to scour the freezer and pantry for food that we’d forgotten about.  The Hairy Bikers have provided us with some inspiration to produce a lovely winter-warming crumble after finding a load of frozen blackberries. I finally got round to using a jar of homemade preserved lemons in a luscious and rich chicken and olive tagine.  Also we used some smoked bacon from the freezer to add some protein and a richness to a spicy potato and leek dish to make a type of hash. Had a moment of weakness when I bought fish and chips for lunch on my day off from work as wanted some junk food as a distraction from the hideous weather. However, I did manage to snag a free dinner of quinoa stuffed pepper and salad on Thursday in return for a volunteering job! We also found frozen pizza dough balls which we defrosted overnight to make pizzas on Friday night and went out to eat on Saturday night instead.

We successfully managed to keep within our £20 budget especially as we had about £2 leftover from last week to add to our money pot. There have been a few times I’ve been tempted to buy food when I’m out and about and also at work but luckily I’ve kept it to a minimum. Again, the limited food budget has made us really think being creative in using leftovers, checking the freezer and pantry regularly to save money and only buy what we really need. Only one more week to go, so hopefully we’ll last the course and not fall by the wayside!
